How To Prepare Edikang Ikong Soup


Edikang Ikong Nigeria Meal


"Edikang Ikong" soup or simply Vegetable Soup is native to the Efiks, people from Cross River and Akwa Ibom states of Nigeria. It is a general notion that the Edikang Ikong soup is very nutritious and this is very much so. Prepared with a generous quantity of pumpkin leaves and water leaves, this Nigerian recipe is nourishing in every sense of the word.

Ingredients:

  1. Water leaf (Shredded)
  2. Pumpkin leaf Ogu Leaf(Shredded)
  3. Pormo/Canda (Cow Skin)
  4. Maggi cube (to taste)
  5. Salt (to taste)
  6. Pepper(grounded)
  7. Onions(diced)
  8. Smoke fish
  9. Cat fish
  10. Cray fish
  11. Oil 0.1 liter
  12. Water 0.2liter



Preparation:

  1. Set up your fire (stove), then the cooking Pot on the Fire.
  2. Pure in the oil inside the put, and allow it to start bobbling.
  3. Add the diced onions and allow it to fry(don’t allow the oil to burn up the onions).
  4. Add up the source (Maggi cube, Salt, Smoke fish, Cat fish, Pormo, and Pepper)
  5. Pure in the shredded water, and allow it to bring out its water, after the water has come out.
  6. Then stir it up, to mix evenly.
  7. Add in the Pumpkin leaf, and allow it to steam up about 5 minutes.
  8. Your soup is ready.
