How to prepare Bitter leaf soup ( Ofe Onugbu)

Bitter leaf soup is a soup prepared with the freshly washed leaves of bitter leaf tree which is naturally bitter. Its one of the traditional soup of the Eastern people of Nigeria. So in other to enjoy the soup, the leaves need to be washed properly. Bitter leaf has high nutritional values. Its good for treating fever, typhoid, it has anticancer property, good for diabetic people, and for a woman who wants to get pregnant, eat lots of bitter leaf.
Ingredients
Handful of Bitter leaf2_3 large size of Cocoyam
225g of crayfish
500g of stock fish
500g of dried fish
500g of assorted meat ( pomo, shaki)
500g of beef
Handful of pepper
Onions
1 tablespoon of Ogiri (optional)
11/2 cooking spoon of palm oil
Seasoning
Salt to taste.
Method of Preparation
Wash the bitter leave for 15 minutes with salt and little water, until the leaves are no longer bitter.Peel and boil cocoyam for 20 minutes until soft and tender.
Put your assorted meat on the fire first, add soft meat 10 minutes later, season the meat, also include your stockfish and dried fish 15 miutes later, so they can be soft for consumption. Boil the meat until soft and tender.
Remove your cocoyam from fire, pound until very soft.
Add the cocoyam puree quantity you want into the pot of meat and fish, add pepper, and allow to simmer for 20 minutes. Stir so as to get smoothness. Add salt and seasoning.
Serve with eba.
